“This is one of my favorite pizzas. It's easy, light, and yet Super delicious! Simple, delicious, and easy to make!” This recipe will give you about a 14inch pizza.
Ingredients
Dough:
2 cups of bread flour or all-purpose flour
1 packet instant yeast
1 1/2 teaspoon sugar
3/4 teaspoon salt
2 tbsp olive oil
3/4 cup warm water
Toppings:
3 tbsp tomato sauce
2oz mozzarella cheese
1 teaspoon grated pecorino cheese (optional)
about 1/2 cup of olives (black and green mixed together)
1 cup of cherry tomatoes
1 tbsp EVO
crushed black pepper or red pepper (to mix with tomatoes sauce)
Dough preparation:
To the warm water add the yeast, sugar and 2 tbsp of flour (taken from the 2 cups of flour). Mix together and let it stand for about 15 min
Now put the rest of the flour in a large bowl and combine with the yeast mixture and stir it, preferably with a wood spoon.
Dust your hand with some flour and work the dough till smooth (it will be a little sticky), and form it into a ball.
Brush another bowl with olive oil and place the dough ball in it and cover with a cloth. Let it sit for about 30 min or until it rises about double. (I usually put it in the oven, turned off.
When the dough is ready, pre-heat the oven to 425 degrees F.
Dust your work surface and knead the dough gently and briefly.
Stretch the dough and transfer it to your pizza sheet (lightly brush the sheet with oil)
Put 3 tbsp of tomato sauce in the center of the dough topped with EVO, pecorino and spread the sauce. Add mozzarella and the other toppings. (Cut the cherry tomatoes in halves).
Bake for about 10 min. (It depends on your oven. Check on the pizza to see if it needs extra time).Finish with some fresh basil leaves, a dust of crushed black pepper and a drizzle of EVO (if you like..I do! :))
